As my children get older & more involved it seems like it gets harder & harder to cook great meals in a quick fashion. Between baseball, cub scouts, church, school functions, etc... I can't prepare a large, difficult meal every night. Sometimes all I've got is 15 minutes! In those cases, one of my go to's is pizza- I use a variety of breads & toppings. And seriously- who doesn't like pizza? Usually, I look in the fridge & use what I've got. Here are some options for ya!
Bread/crust:
- whole wheat sub roll
- whole wheat pitta
- whole wheat flat bread
- canned biscuits (last resort lol)
Sauce:
- you can make your own tomato sauce, but let's face it, to make this in 15 minutes you're going to need to crack open the good ole Ragu & get it done quick! There are some great organic options for canned spaghetti/marinara/pizza sauce. They taste just as good!
Toppings:
- puréed sweet potatoes
- sautéed veggies
- cheese
- puréed beans
- puréed butternut squash
- meat of choice
- garlic powder
- other dried spices
- puréed cauliflower
The pizza in the pictures is from tonight's menu- I used a whole wheat sub roll, split in half. Spread on some canned spaghetti sauce (thinly), spread a thin layer of pureed sweet potato & raw spinach (raw spinach doesn't have much of a taste), sprinkled on a little garlic powder, & topped with deli Colby jack cheese. Pop in the oven at 400 for a few mins until cheese is melted. So quick, easy, & basically no clean up if you cover your baking sheet with foil. (Then u can just throw away foil for easy clean up)
Here are a couple more ideas:
BBQ chicken pizza - use BBQ sauce instead of pizza sauce & left over chicken. Don't forget your veggies too
Taco pizza - use that leftover taco meat we all have after taco night on bottom (it will act as sauce too), top with puréed sweet pot. or squash & cheese- sprinkle with chopped chives or green onion
Chicken Alfredo pizza- canned Alfredo sauce, leftover chicken, cauliflower purée, parmesan, & mozzarella
Get creative!! Throw a bag of the steamable veggies in for a side & you're done! The main thing is that even if this is all you have time for its still better than a happy meal!!!
