Canadian Bacon Pasta Bake is what was on the menu for last night's dinner - did I mention it had CANADIAN BACON in it? Bryce loved the canadian bacon part & kept just calling it the canadian bacon stuff - so in our family it may have a new nickname! But the real star of the show is the zucchini that kids never suspected to be hanging around! This meal is super easy and a great crowd pleaser (my hubby ate 4 pieces!). It worked great in their lunch boxes today too! With the protein from the eggs and canadian bacon paired with whole wheat pasta & zucchini what mom wouldn't feel great about feeding this yummy treat to the whole fam?!
Ingredients:
- 1 cup whole wheat elbow or shell shaped pasta
- 1 zucchini grated (I use a cheese grater)
- about 2 Tbsp sliced green onions (sliced thin)
- 1/2 cup self rising flour
- 3 eggs
- 1 cup cheddar cheese
- 1 pkg canadian bacon cut into bite size squares
- 1/2 frozen corn (or you can use a can of corn kernels & drain juice- whatever you have on hand works)
Directions:
- preheat oven to 400 degrees
- cook pasta according to package directions, drain & set aside to cool
- in a large bowl mix remaining ingredients
- after pasta is cool enough to touch (you don't want to cook eggs when adding) add pasta to the mixture & pour into a small greased baking dish
- bake at 400 until the center is set & the edges are golden brown - 30-45 minutes.
- Then VIOLA! (in my house pronounced WHA- LA!) you have a tasty meal for everyone!
- cut into squares & serve.
My kids top everything with that powdery parmesan cheese stuff so they top theirs off with that. I figure that they're getting enough veggies and healthy stuff in this meal that 1/2 a tsp of white powder won't kill them!
